We butcher whole fresh chickens delivered every morning, with Senju scallions, shiitake, shishito peppers… selected by specialists
…and more, our veteran artisans carefully grill them over ubame-oak binchōtan charcoal.
By day for business lunches, and by night with our traditional yakitori Full Course, please make use of us for entertaining with your tie loosened just a little, or for dining gatherings with cherished family and friends.

From the chicken itself to the scallions sourced from specialist wholesalers, we prepare carefully selected ingredients with the skill of seasoned artisans.
Grilled to perfection, with the pleasant aroma of ubame-oak binchōtan charcoal.

  • 1. Chicken tender: lightly grilled with salt, served with wasabi
  • 2. Liver: liver, heart, kidney and more, grilled with tare sauce
  • 3. Gizzard: salt-grilled
  • 4. Negima (scallion roll): Thinly slice the thigh, wrap it around scallion, and grill with tare sauce. Shishito pepper and shiitake between the pieces of meat
  • 5. Tsukune meatball: no binders at all, concentrating the savor of the chicken
  • 6. Skin: skewered skin layered with neck meat, grilled with salt
  • 7. Thigh: Chopped thigh, with scallion and shishito pepper between the pieces of meat, grilled with tare sauce
  • 8. Duck: cut into bite-size pieces, salt-grilled
  • 9. Wing: cut into chunks bone and all, grilled with salt

Chicken has long been known as "high in protein and low in calories," but the "imidapeptide (imidazole dipeptide)" contained in chicken breast and chicken tender has been proven to be the ultimate anti-fatigue substance, reducing fatigue of the brain and muscles (*).
With the chicken tender and negima (scallion roll) in each of our courses, you can deliciously take in the imidapeptide (200mmg or more) needed to soothe a day's fatigue.
Furthermore, the cherry tomatoes reborn in the flame of binchōtan charcoal contain lycopene, while the ergosterol found in the finest log-grown shiitake powerfully supports the absorption of calcium in cartilage.

A 1:24-scale model: the journey of a full scratch build
